Easy Frozen Burritos

There are times after a long day of fishing when meal prep is not an option, too tired and not wanting to wait for food to cook. This is especially true in June or July when the days are long and we don’t get off the water until 8:30 or 9pm. Most times, we are jamming to get to a restaurant in Driggs, like the Tatanka Tavern for pizza before they close. Other times, we just want to get home.

One item I keep handy in the freezer is Tinas Burritos or similar. They are extremely convenient, but you have to dress them up, or they don’t taste that great plain out of the wrapper. Another item I will pull out f the freezer is my leftover green chili. There are times when the chili isn’t available and even then, I can make do.

To make, microwave a couple of burritos for 2min. Unwrap and place them on a plate or a large bowl. Next I place a layer of slice jalapenos on top of the burritos, if you don’t care for the extra heat, skip this step. Next is the chili, homemade or from a can, it doesn’t matter. Put a liberal layer over the burritos. Sometimes, if I don’t have my homemade chili I use canned black beans, or Ranch Beans which can be a great substitute. Finally, is the cheese layer, top. I prefer shredded mozzarella, but any shredded cheese works. Next return the dish to the microwave and zap until the cheese is melted, usually another two minutes.

The result is a meal that is both tasty and very filling and it’s ready in under 10 minutes.

Frozen Pizza

This meal is self explanatory. I usually keep frozen pizzas in my freezer for a similar reason. Quick and easy. They can be any kind that appeals to you. Sometimes I try to be healthy-er by going with the cauliflower crust pizza from Costco. Most of the time, it’s whatever looks good at Broulims. We try to balance this meal out by paring it with a bag salad, which you can find everywhere now. Super convenient because they come with dressing and other toppings. Takes a little longer due to oven pre-heat and cooking time.
